I probably should have read this recipe before actually making it, because it’s a pretty poor recipe to begin with. The chicken is just boiled in bbq sauce and coke. Ummm, yeah. Sure, it was fast, but it didn’t taste very good. Boiled chicken breast just doesn’t go great. Perhaps a chicken thigh would have turned out better.
At the same time, why even add coke? It didn’t do much. I think chicken heated in a pan of bbq sauce would have tasted better. My mom used to make something like that.
Just coke, bbq sauce, and ketchup. Yup, that’s it.
The herbed potatoes were really tasty, but there wasn’t much groundbreaking here. Rub in oil, sprinkle with herbs, and bake till cooked.
This can be a really simple meal to make, but it just wasn’t my style. As mentioned above, I’d just pan-cook the chicken in some bbq sauce. Maybe add water, or even coke if you really want (and have some on hand) so the sauce doesn’t get too thick, but I think the juices from the chicken (if you don’t use breasts) will handle that.
This could be served with rice or potatoes as pictured, and be a good quick meal. Kids have simple tastes, so this might be up their alley. For adults though, I don’t think anyone will be impressed! You can see the original recipe posted here.
