As a big fan of honey mustard, I had to try this honey dijon garlic chicken recipe. Always on the lookout for quick dinners, this was the perfect matchup! These are all ingredients that you likely have on hand, and you can tweak the proportions to customize it to your taste. Pan fry up some veggies and stick some rice in the rice cooker, and you’ll be good to go for a 3 course meal for you or the fam.
Make extra and these are still tasty the second day, and they’ll be perfect for tupperware lunches at the office or school. Sub in chicken breast for a healthier option as well.
Here’s a quick snap of the honey mustard sauce. The original recipe asked for stone ground mustard, which is probably a bit more coarse than what I had on hand, but this was close enough!
Personally, I like my honey mustard a bit more on the “spicy” side, but I ran out of mustard. That’s the great thing about custom making your own sauce – you can make it exactly how you want!
I seasoned the chicken with salt and pepper beforehand, just out of habit.
After sautéing the garlic and adding the chicken breasts to cook in the oil for a few minutes until almost done, it’s time to add in the honey mustard sauce. Then it’s just a matter of cooking the chicken and reducing the sauce. I like to have a very thick sauce, so I let it cook a few more minutes to get a thick glaze for serving.
I didn’t prep any starches with this meal because I was cooking it just to test the recipe, but it would be great with rice or potatoes. The sauce it a little sweet, so keep that in mind when picking a seasoning for your starch. The honey mustard glaze would be perfect for topping on some brown or white rice IMO.
