Ingredients
  • 6Pieces Chicken Drumsticks
  • 1Piece Spanish Chorizosliced
  • 2Cups Paella Rice
  • 2Tablespoons Basil Pesto
  • 1Cup White Wine
  • 2Cups Chicken Stock
  • 1Piece White Onionminced
  • 6Cloves garlicminced
  • 1Tablespoon olive oil
  • Saltto taste
  • Pepperto taste
Instructions
  1. Season chicken with salt and pepper.
  2. Heat oil in a paella pan.
  3. Sear the chicken drumsticks until brown.
  4. Add the chorizo, onions, and garlic into the pan. Sautee until onions are translucent.
  5. Deglaze the pan with white wine.
  6. Add the rice and stir until evenly coated with the oil in the pan.
  7. Add the chicken stock and bring to a boil.
  8. Stir in the pesto and add the bay leaves.
  9. Reduce heat to low, cover, and leave to steam for 17 minutes.
