Ingredients
For the Chickpea Flour Pizza Dough
  • 1Cup Chickpea Flour
  • 1/2Cup Water
  • 1/2Teaspoon Salt
  • 1/2Teaspoon Cumin Powder
For the Curry Topping
  • 4Cloves garlicminced
  • 12″-Piece Gingerminced
  • 1/2Cup Yogurt
  • 2Tablespoons Curry Powder
  • 1/2Teaspoon Salt
  • 1Cup Eggplant Slices
  • 1Piece red bell pepperthinly sliced
  • 1Piece Red Onionthinly sliced
  • 1/2Cup Paneer
  • 1 Teaspoon Turmeric Powder
  • 1Tablespoon olive oil
Instructions
  1. Stir chickpea flour, water, salt, and cumin powder in a bowl.
  2. Pour the batter onto a non-stick pan and cook over medium heat for about 2 minutes per side.
  3. Roast garlic and ginger in lightly oiled pan.
  4. Add the curry powder and roast until aromatic.
  5. Stir in the yogurt.
  6. Toss the eggplant slices, bell pepper, and onions in olive oil, salt, and turmeric powder.
  7. Top the pizza crust with curry sauce, vegetables, and paneer.
  8. Broil for 8-10 minutes at 400F.
