Ingredients
  • 1Kilogram Chicken Legs
  • 1Piece Lemonjuice and zest
  • 4Cloves garlicgrated
  • 1Teaspoon Dried Thyme
  • 1/2Tablespoon Black Peppercornscrushed
  • Saltto taste
  • 2Tablespoons olive oil
  • 2Cups Demi-Glace
  • 1 /2Tablespoon Fresh Thymechopped
Instructions
  1. Combine lemon juice and zest, garlic, black peppercorns, dried thyme, and olive oil in a bowl.
  2. Add the chicken legs and marinate overnight.
  3. Arrange the chicken legs on a baking sheet and season with salt.
  4. Sear the chicken legs for 15 minutes in the oven set to 220C.
  5. Turn the heat down to 180C and continue roasting for another 25-30 minutes.
  6. Take the pan drippings and reduce together with the demi-glace to make the sauce.
  7. Fold in the chopped thyme.
