Ingredients
  • 1Whole Chicken
  • 13″-piece Ginger
  • 1Piece White Onion
  • 3Pods Black Cardamom
  • 5Pieces Star Anise
  • 1Tablespoon Coriander Seeds
  • 2Pieces Cinnamon Bark
  • 3Pieces Kaffir Lime Leaves
  • 6Pieces Cloves
  • 2Tablespoons Sugar
  • 4Tablespoons Fish Sauce
  • 6-8Cups Water
  • 500Grams Rice Noodlescooked to package instructions
  • Fresh Cilantrofor garnish
Instructions
  1. Char ginger and onion over direct flame.
  2. Blanch chicken in salted boiling water.
  3. Roast black cardamom, star anise, cinnamon bark, coriander seeds, and cloves in a skillet.
  4. Rinse chicken in cold water.
  5. Combine roasted spices, ginger, onion, chicken, sugar, kaffir lime leaves, fish sauce, and water in the slow cooker.
  6. Cook for 8 hours on low.
  7. Cook rice noodles in a separate pot.
  8. Chop chicken into pieces.
  9. Strain broth with a fine mesh strainer.
