This is a very simple chocolate mint cupcake recipe due to the straighforwardness of the instructions, as well as the ingredients. To start, we’re instructed to make chocolate cake. That’s it! LOL. Though we don’t see the exact recipe for chocolate cake in the video, I assume that any cake will do, even chocolate cake mix from the box!
After you make the cake, scoop each muffin tin 3/4 full of the batter and put in the oven. Most recipes call for about 300-350 degrees for 15-20 minutes depending on your oven. I tend to go for a lower temp like 300 and bake a bit longer.
The frosting for this chocolate mint cupcake recipe is easy as well! A stick of butter. A package of cream cheese. Beat them together with a bit of milk and peppermint extract. This recipe is a bit unique because not all frosting recipes use cream cheese as a base.
Oh ya, don’t forget to add the confectioners sugar…
Add green food coloring til you get the color you want. I’ve noticed a lot of people are using food coloring gel to prevent the consistency of the cream from getting too thin.
You can frost with a fancy piping bag, or just use a knife – whatever is on hand! Add sprinkles or toppings depending on what you have on hand. Anything chocolatey or minty would go great. One thing I liked about this recipe is that it doesn’t add a lot of extras. Sometimes, a lightly minty (but mostly chocolate) flavor is best. not everyone wants the mint flavor to be strong!
