Who doesn’t love buffalo chicken? And to top it off with some vegetables and macaroni is just genius. This is a great recipe for any day of the week and does not take long to cook at all. In fact, with football season just around the corner, you could easily make a batch or two of this up for all of your friends and family.
This is one of my favorite recipes because it is so versatile. While this is a meal on its own, you can elevate a number of dishes just by adding this as a topping. Wait, what? Yes, I said it. A topping. Now, while you think about that for a moment, let me provide you with some tips and tricks to make this recipe fabulous.
For this recipe, I added some amber ale to the mix. This is a good, neutral beer that’ll add a bit of sweet maltiness to the mac n’ cheese without being too sweet, or imparting any other strong flavors like roastiness, fruitiness, or hoppiness. Abita Brewing has some awesome brews worth trying, and this one was no different!
When it comes to the vegetable mix, you can use any vegetables you like. For instance, if you want more of a buffalo chicken philly mac and cheese, add in mushrooms, onions, and green peppers. Your combination of vegetables can really be anything. For example, if you like your buffalo mac and cheese spicy, toss in some jalapeños.
If you are feeling daring, instead of using chicken for this recipe, swap it out for some top sirloin. Oh, yum! It really is good; I have made it a couple times before since we eat so much chicken in this house.
If you want to really make this dish fun, add in a packet of ranch seasoning mix or add some crumbled blue cheese to the top of the dish.
Okay, above I mentioned using this dish as a topping. I gave you some time to think. Did you come up with any ideas? Okay, hear me out now. I like to take this recipe and put it on top of a baked potato for a family meal.
In addition to that, I like to make burgers and then place this on top of them as a garnish. It is so delicious, trust me.
Lastly, I like to take this recipe and place it between two pieces of bread, butter the bread, and then fry it up. Yep, buffalo chicken mac and cheese grilled cheese. How amazing does that sound?
If you do not want to get creative with your recipe, have no fear. This is an awesome dish on its own and you can tweak it the way you need to, which makes it a versatile recipe. It’s super easy just to mix everything up in a dish in less than 5 minutes and toss it into the cooker then forget about it for a while 😉
No matter what you choose to do with this recipe, you and your friends are sure to be satisfied with it. Oh, on a last note, make sure that you adjust the hot sauce to meet your taste preferences. You can always start with less and then gradually add more.
Lastly, if you are not comfortable putting uncooked noodles into your slow cooker, simply leave them out and cook them on the side. 15 to 30 minutes before your mix is done cooking, add in the pasta and give it a good stir. However, I’ve never had an issue with them fully cooking using just the slow cooker so I wouldn’t worry about getting uncooked noodles.
