Slow Cooker Sweet Cinnamon Rice Pudding

Ingredients

  • 3 cups Instant White Rice cooked
  • 1 teaspoon Cinnamon ground
  • 1/2 cup Raisins chopped
  • 14 ounces Sweetened Condensed Milk
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon White Sugar
  • 12 ounces Evaporated Milk

Instructions

  • Lightly grease the inside of your slow cooker
  • In a bowl, mix together the rice, vanilla, raisins, evaporate milk, and sweetened condensed milk
  • Mix well and pour into the slow cooker
  • Cover and cook on LOW for 4 hours
  • Uncover and sprinkle with sugar and cinnamon
  • Serve

Slow Cooker Sweet Cinnamon Rice Pudding is an all-time favorite in this household and it is even more of a winner at the company potlucks. This pudding is creamy, sticky, and packed full of flavor. Your taste buds are bound to go crazy when you take your first bite.

One of the best things about this recipe is that it can be made any night of the week and it will provide you with a spoonful of decadence that you cannot refuse. From kids to adults, everyone always loves this after meal dessert and it only takes a few hours to make.

In fact, if you have some running around to do after you pick the kids up from school, simply toss this dessert in before you walk out the door and when you come, you will be greeted by the smell of the sugary cinnamon rice.

I do want to provide you with some tips and tricks to help make this recipe better and easier for you. For starters, if you are not a fan of raisins, do not use them. This recipe is good without them too. Also, instead of raisins, you could add in a dried fruit such as apricots, cranberries, or even blueberries. We have played mix and match and it comes out great every time.

Next, depending on how much cinnamon you like, you may want to bump this recipe up to 1 1/2 teaspoons or even 2 teaspoons. Our house goes crazy for cinnamon, so it gets an extra sprinkle or two, okay maybe three around here.

You will notice that the recipe calls for evaporated milk. It is important that you use evaporated milk and do NOT substitute it out. You cannot use heavy cream or milk in this recipe as it may curdle over the cooking time. You can find evaporated milk in the baking section of your local grocery store and it is often located next to the sweetened condensed milk.

Now, there is one alteration you can make that is fun and it will excite your taste buds. This recipe calls for regular sweetened condensed milk, but, you can choose to switch it up and use the caramel or chocolate variations of the sweetened condensed milk. This will help give your pudding a boost of its own.

You can use brown rice in this recipe if you prefer and you do not have to use instant rice. You can purchase traditional long grain rice and use, but make sure that it is cooked BEFORE it goes into the slow cooker.

Lastly, if you are home when this recipe is in the slow cooker, make sure you stir it a couple of times to prevent burning on the bottom. Every slow cooker is different and yours may cook faster than mind does, which means burning is a possibility if you allow it to sit.

Slow cooker sweet cinnamon rice pudding is an awesome addition to your dessert recipes and is easy to make. The slow cooker used for this recipe was the Crock Pot 4-Quart Manual Oval in the under $30 category. It's a very basic slow cooker, but very inexpensive, and certainly gets the job done for small dessert recipes like rice pudding. In fact, it got my #1 rating for this its price category and size!
