Black Pepper and Mint Sous Vide Pineapples

- 1 Pieces Pineapple peeled and cut into quarters
- 1/3 Cup Brown Sugar
- 1 Teaspoon Black Peppercorns
- a Pinch Salt
- a Handful Mint Leaves
Peel and cut the pineapple into quarters.
Muddle the mint leaves, brown sugar, mint, black peppercorns, and salt in a mortar and pestle.
Rube the pineapple wedges with the sugar mixture.
Put in a sous vide bag and cook for an hour at 170F.
