Crockpot Pork and Apple Stew

- 1/2 Kilo Pork Tenderloin cut into cubes
- 1 Pieces Carrot peeled, cut into chunks
- 1 Pieces Onion roughly chopped
- 3 Stalks Celery roughly chopped
- 2 Pieces Apples cored, cut into wedges
- 2 Pieces Potatoes peeled, cut into chunks
- 1 Teaspoon Dried Sage
- 1 Tablespoon Prepared Mustard
- 1 Cup White Wine
- 1 Cup Pork Stock
- 1 Bunch Fresh Tarragon
- 1/2 Tablespoons Crushed Black Pepper Corns
- 1/2 Stick Butter
- Salt to taste
Season pork with mustard, salt, pepper, and dried sage.
Sear the pork in a lightly oiled pan.
Add in celery and carrots and roast briefly.
Deglaze the pan with white wine.
Transfer into a slow cooker, together with the potatoes, stock, and fresh tarragon leaves.
Cook on low for 4 hours.
Finish off by adding cold butter.
