Filipino Chicken Adobo Tacos with Fresh Mango Salsa

Ingredients

Tacos

  • 4 Pieces Chicken Breasts boneless
  • 1/4 Cup Soy Sauce
  • 1/4 Cups White Vinegar
  • 2 Tablespoons Worcestershire Sauce
  • 6 Cloves garlic crushed
  • 1 Tablespoons Black Peppercorns whole
  • 3 Pieces Bay Leaf dried
  • 1 Cup Chicken Stock

Aioli

  • 1 Cups Mayonnaise
  • 2 Cloves garlic grated
  • 1 Pieces Lime juice
  • Salt to taste
  • Black Pepper to taste

Mango Salsa

  • 1 Cup Tomatoes thinly sliced
  • 1 Cup Ripe Mangoes cut into strips
  • 1/2 Cup Red Onions thinly sliced
  • 1 Bunch Cilantro rough chopped
  • 1 Piece Lime juiced
  • Salt to taste
  • Pepper to taste

Instructions

  • Combine all marinade ingredients except for the chicken stock.
  • Add chicken fillets and allow to marinate for at least 2 hours.
  • Transfer to a slow cooker. Add about a cup of chicken stock and cook on low for 4 hours.
  • Combine all ingredients for the salsa in a bowl. Cover and refrigerate.
  • Combine ingredients for the aioli in a bowl. Set aside.
  • Cut cooked chicken into strips.
  • Assemble the tacos.
