Fried Catfish with Oven Fries

This fried catfish and oven fries dish is an American spin on the British classic of fish & chips. Enjoy it with your favorite tartar sauce and a crisp sparkling beverage!

Ingredients

Catfish

  • 4 6-ounce Catfish Fillets
  • 1 cup Fine Cornmeal
  • 1.5 tablespoons Flour
  • 1.5 teaspoons Baking Powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 0.5 teaspoon Garlic Powder
  • 0.5 teaspoon Onion Powder
  • 0.5 teaspoon Cayenne
  • 3 cups Canola Oil
  • Tartar Sauce
  • 1 Lemon, sliced into wedges

Oven Fries

  • 5 medium Russet Potatoes
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Sea Salt
  • Black Pepper
  • 1 teaspoon Paprika

Instructions

  • Heat canola oil in heavy-bottomed skillet to 340 F.
  • Meanwhile, blend the cornmeal, flour, baking powder, salt, pepper, garlic & onion powder and cayenne in a large bowl.
  • Pat the catfish dry and dip each side in the cornmeal mixture.
  • Fry in hot oil, 5-7 minutes each side, until golden. Set aside to drain.
  • For fries, preheat oven to 425 degrees F.
  • Rinse well, and slice the potatoes into ½” thick wedges
  • Line baking sheet with baking paper and spread potato slices over.
  • Drizzle olive oil over potatoes, and sprinkle salt and pepper and paprika.
  • Bake until crispy and golden brown, 15-20 minutes, stirring partway through.
