Fried Zucchini & Feta Cheese Patties with Tzatziki

This recipe offers a great combination of tastes and flavors, bringing together zucchini, garlic, dill and yogurt. The patties are crunchy on the outside, but soft and tender on the inside.

Ingredients

Zucchini Patties

  • 2 Medium Zucchinis
  • 1 Green Onion
  • Small Bunch of Dill
  • 1 Egg
  • 1/2 cup Feta Cheese
  • 1/4 tsp Nutmeg
  • 1/3 cup All Purpose Flour
  • 1/3 tsp Baking Soda
  • Salt and Pepper to taste
  • Vegetable Oil for Frying

Tzatziki

  • 1 cup Greek Yogurt
  • 1 Cucumber
  • 1 Garlic Clove
  • 1/2 tsp Dried Oregano
  • 1 tsp Extra Virgin Olive Oil
  • Salt to taste

Instructions

Zucchini Patties

  • Grate the zucchinis.
  • Add some salt and stir with your hands.
  • Place the grated zucchini in a sieve over a pot to release the juice and set aside for 15 minutes.
  • Squeeze the grated zucchini to get rid of most of the liquid and transfer to a bowl.
  • Chop the onion and the dill and add to the bowl.
  • Add the crumbled Feta cheese and the nutmeg. Stir well.
  • Beat the egg and add it to the zucchini mixture.
  • In a separate bowl combine the flour with the baking soda.
  • Little by little add the flour mixture to the zucchini bowl.
  • When the ingredients stick together and the mixture can be shaped, start forming the patties.
  • Heat the vegetable oil in a pan.
  • Fry the patties for 4-5 minutes on each side until golden brown.

Tzatziki

  • Place the Greek yogurt in a bowl.
  • Crush the garlic and add to the yogurt.
  • Chop the cucumber in very small pieces and add to the other ingredients.
  • Stir in the oregano and the olive oil.
  • Season with salt to taste and stir well.
  • Serve the patties with tzatziki and enjoy.
