Definitely among my top picks for gluten-free pizza doughs. This crust can actually pass as something made from gluten-rich flours.

Ingredients

For the Montina Flour Pizza Dough

  • 3/4 Cup Montina Flour
  • 1/2 Cup Potato Flour
  • 1 Teaspoon Xanthan Gum
  • 1/2 Teaspoon Salt
  • 3/4 Cup Warm Water
  • 2 Teaspoons Active Dry Yeast
  • 2 Teaspoons Sugar
  • 2 Tablespoons olive oil

For the Toppings

  • 1 Cup Sliced Button Mushrooms
  • 1 Cup Ricotta Cheese
  • 2 Tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  • Stir the yeast, sugar, and water in a bowl. Leave for 10 minutes.
  • Combine the montina flour, potato flour, xanthan gum, and salt in a bowl.
  • Stir in the oil and active yeast mixture.
  • Leave in a lightly oiled bowl for 30 minutes.
  • Set the dough in between sheets of parchment paper and flatten out with a rolling pin.
  • Pre-bake the crust for 5-7 minutes at 425F.
  • Top your pizza.
  • Finish baking for another 15-20 minutes.
