Sous Vide Asian BBQ Pork Chops with Spicy Pickled Apples

Ingredients

Marinade

  • 1 Teaspoon Asian Five-Spice Powder
  • 1 Tablespoon Hoisin Sauce
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Honey
  • 2 Teaspoons Brown Sugar
  • 1 Tablespoon Chinese Cooking Wine
  • 1 Teaspoon Grated Ginger
  • 1 Teaspoon Grated Garlic

Spicy Pickled Apples

  • 1 Pieces Apple cut into matchsticks
  • 1 Piece Shallot thinly sliced
  • 1/4 Cup Leeks thinly sliced
  • 1/2 Cup Apple Cider Vinegar
  • 3 Pieces Black Cardamom Pods
  • 1 Teaspoon Black Peppercorns
  • 1 Teaspoon Coriander Seeds
  • 5 Pieces Star Anise
  • 1 Tablespoon Salt
  • 2 Tablespoons Sugar

Pork Chops

  • 2 Pieces Bone-in Pork Chops 1 inch thick
  • olive oil
  • Salt

Instructions

Pork Chops

  • Combine all ingredients for the marinade in a bowl.
  • Put pork chops in a sous vide bag together with the marinade. Seal and refrigerate overnight.
  • Pre-heat a water bath to 140F.
  • Cook porkchops for an hour.
  • Transfer cooked chops to an ice bath.
  • Pat dry the porkchops with paper towels. Season lightly with salt.
  • Reduce cooking juices left in the sous vide bag in a saucepan until syrupy.
  • Sear chops for a minute per side in a hot skillet.
  • Brush with reduced bbq glaze before serving.

Spicy Pickled Apples

  • Simmer the vinegar, cardamom pods, black peppercorns, coriander seeds, star anise, salt, and sugar for 5 minutes.
  • Combine apples, shallots, and leeks in a covered container. Pour in pickling liquid.
  • Leave to cool completely.
  • Refrigerate overnight.
