Sous Vide Greek Burger with Feta Cream

Ingredients

For the Patties

  • 500 Grams 80/20 Ground Beef
  • 1 Tablespoon Dried Marjoram
  • 1 Tablespoon Dried Oregano
  • 1 Tablespoons Dried Parsley Flakes
  • 1 Tablespoon Salt
  • 1/2 Tablespoon Black Pepper

For the Feta Cream

  • 2/3 Cup Heavy Cream
  • 1/2 Cup Feta Cheese crumbled
  • 1/2 Tablespoon Garlic Powder
  • 1 Teaspoon Black Pepper
  • 1/2 Teaspoon Salt

For Serving

  • 2 Pieces Burger Buns
  • 1 Piece Red Onion thinly sliced
  • Fresh Parsley rough-chopped
  • Lettuce

Instructions

  • Form 8oz. patties.
  • Season with salt, pepper, and dried herbs.
  • Put the patties into sous vide bags.
  • Cook for 40 minutes at 140F.
  • Meanwhile, make the feta cream. Whisk egg yolks and cream in a saucepan over low heat until thickened. Fold in the feta cheese, garlic powder, salt, and pepper.
  • Transfer the patties to an ice bath.
  • Sear the patties in a hot cast iron pan for a minute per side.
  • Top the burgers with feta cream and serve on buns with lettuce, red onion slices, and fresh parsley.
