Thai Pork with Basil

- 500 Grams Pork Tenderloin cut into cubes
- 1 Head garlic minced
- 1 Piece Red Onion thinly sliced
- 3 Pieces Thai Chili chopped
- 1 Cup Pineapple Chunks
- 2 Tablespoons Brown Sugar
- 1-2 Tablespoons Fish Sauce
- a handful Thai Basil
- a bunch Water Spinach
Season the pork lightly with salt.
Heat oil in a wok.
Sear the pork until slightly brown on all sides.
Add the garlic and chili. Sautee briefly.
Add the pineapple chunks and red onion slices. Sautee until pineapples are slightly soft.
Season with sugar and fish sauce.
Add the water spinach and sautee until slightly wilted.
Turn off the heat and toss in the Thai basil leaves.
