Beef and Vegetable Skewers with Cabbage Salad and Walnuts

This recipe is perfect for a quick dinner. Serve with a cabbage salad with dill and walnuts and you will have a delicious, healthy meal.

Ingredients

Skewers

  • 11 oz beef sirloin
  • 2 Red Bell Peppers
  • 2 Green Bell Peppers
  • 4 Red Onions
  • Salt and Pepper to taste

Cabbage Salad

  • 1/2 Cabbage Head
  • 1 Small Bunch of Dill
  • 1/2 cup Walnuts
  • 1 tablespoon Sunflower Seeds Oil cold pressed
  • 1 teaspoon Balsamic Vinegar
  • Salt and Pepper to taste

Instructions

Skewers

  • Rinse the meat and chop into bite size pieces.
  • Wash the peppers and cut in small squares.
  • Peel the red onions and cut in quarters.
  • To assemble, place a piece of red bell pepper, a piece of green bell pepper, 1 or 2 onion sheets and a piece of meat on a wooden skewer.
  • Repeat until you complete one skewer, leaving enough space to be easy to handle.
  • Do this for all the skewers.
  • Sprinkle with salt and pepper.
  • Preheat the electric grill.
  • Place the skewers on the grill and flip them over every 2-3 minutes so they get evenly cooked. It will take about 9-10 minutes.
  • Cook until the veggies soften and turn brown and the meat is no longer red on any side.

Cabbage Salad

  • Chop the cabbage as thinly as you can.
  • Rub it with some salt.
  • Add black pepper, sunflower oil and balsamic vinegar. Toss to coat.
  • Chop the dill and add it to the salad. Stir well.
  • Chop the walnuts and place on top of the salad.
