Ingredients
Skewers
- 11 oz beef sirloin
- 2 Red Bell Peppers
- 2 Green Bell Peppers
- 4 Red Onions
- Salt and Pepper to taste
Cabbage Salad
- 1/2 Cabbage Head
- 1 Small Bunch of Dill
- 1/2 cup Walnuts
- 1 tablespoon Sunflower Seeds Oil cold pressed
- 1 teaspoon Balsamic Vinegar
- Salt and Pepper to taste
Instructions
Skewers
- Rinse the meat and chop into bite size pieces.
- Wash the peppers and cut in small squares.
- Peel the red onions and cut in quarters.
- To assemble, place a piece of red bell pepper, a piece of green bell pepper, 1 or 2 onion sheets and a piece of meat on a wooden skewer.
- Repeat until you complete one skewer, leaving enough space to be easy to handle.
- Do this for all the skewers.
- Sprinkle with salt and pepper.
- Preheat the electric grill.
- Place the skewers on the grill and flip them over every 2-3 minutes so they get evenly cooked. It will take about 9-10 minutes.
- Cook until the veggies soften and turn brown and the meat is no longer red on any side.
Cabbage Salad
- Chop the cabbage as thinly as you can.
- Rub it with some salt.
- Add black pepper, sunflower oil and balsamic vinegar. Toss to coat.
- Chop the dill and add it to the salad. Stir well.
- Chop the walnuts and place on top of the salad.
Beef skewers are a really nice way of preparing the meat. Besides their good taste, they also look fantastic. I love the color combination and the fact that you can use any vegetable you want. Plus, this is a healthy recipe. The meat and veggies are grilled, no oil or fat is used so it is perfect even for people on a diet. Not vegetarian, of course.
People usually don't prepare skewers because they seem a little bit elaborate and some might think that it is complicated to make them look like this. On the contrary it is actually quite simple and you will see that in the explanations below. Plus you will spend only 30 minutes of your precious time to prepare this delicious dish.
This recipe requires a few ingredients that you can find in any producers' market or even supermarket. Of course, it is advisable to buy your meat and veggies directly from the producers. First of all because you support local farmers and encourage them to grow more goodies and second because they don't contain pesticides or so many antibiotics, in case of meat.
So, here are the ingredients you will need for the skewers and the cabbage salad: beef sirloin, red and green bell pepper, red onion, green cabbage, a bunch of dill and some walnuts.
You may also use other veggies such as tomatoes, zucchinis, eggplants, even garlic. In case you opt for zucchini and eggplants, slice them, brush with olive oil and them sprinkle some oregano.
First prepare the ingredients: chop the meat in bite size pieces, cut the peppers in small squares and the red onion in quarters.
Assembling them is quite easy. I used wooden skewers, but metal ones are OK too. Take a piece of green pepper and place it on the skewer. Do the same with a piece of red pepper, onion and meat. Or switch places, it really doesn't matter how you place the ingredients. I actually didn't respect any rule, just grabbing what it was at hand. This is the way your skewers should look like when they are ready to cook.
Preheat the electric grill and place the skewers. Let them cook for 2-3 minutes each side, and then flip them over. You will need about 10 minutes for the meat to be cooked through. Check on the veggies from time to time so they don't get burn. When the beef skewers are ready the veggies should be soft and the meat no longer red.
To prepare the salad, chop the cabbage first. Try to cut it as thinly as you can. In case it seems to complicated, you may always use a grater. It will help you get thin vegetables without the effort of using the knife. Place the cabbage in a bowl and rub it with some salt using your hands. This way it will soften a little bit.
Next chop the dill. I simply love dill. It is my favorite herb by far. Its flavor is like ambrosia to me. But there may be people which don't enjoy it as much as I do. If you are amongst them, use less dill, just a few sprigs would be enough. You may even replace it with fresh coriander leaves.
Add the dill to the salad and season with some coarsely ground pepper. Try to buy black peppercorns and ground yourself. You will benefit from the full aroma. Already ground pepper doesn't taste that good because this procedure has been done long time ago. It is the same for all the other spices. Invest in a good grinder and use it any time you need to.
After that, add the sunflower oil and the balsamic vinegar. Toss well to coat and the flavors to combine.
Chop the walnuts in large pieces and top the cabbage. Walnuts are a great addition to cabbage, they make a perfect combination. In winter I usually prepare sauerkraut salad with walnuts and sun dried tomatoes. Simply delicious!
