Sous Vide Red Curry Crusted Beef Prime Rib with Thai Cucumber Raita

Ingredients

For the Steaks

  • 2 Pieces Beef Prime Rib Steaks
  • 2 Tablespoons Thai Red Curry Paste
  • Salt to taste

For the Raita

  • 1.5 Cups Cucumber deseeded and thinly sliced
  • 1 Cup Red Radish thinly sliced
  • 1 Piece Red Thai Chili finely chopped
  • a bunch Fresh Basil chiffonade
  • a bunch Fresh Mint chopped
  • 2 Cloves garlic finely chopped
  • 1 Tablespoon Honey
  • 1 Tablespoon Fish Sauce
  • 1 Tablespoon Tamarind Paste

Instructions

  • Combine honey, fish sauce, chili, tamarind paste, garlic, basil, and mint in a bowl.
  • Toss in cucumber and radish. Cover and chill until ready to serve.
  • Season steaks with salt.
  • Put steaks in a sous vide bag and cook for 40 minutes at 130F.
  • Transfer steaks to an ice bath.
  • Brush steaks with red curry paste on both sides.
  • Sear steaks for 45 seconds per side in a cast iron pan.
  • Let the steaks rest for 10 minutes.
  • Serve with cucumber raita.
