Spicy Sardine Potato Balls

A perfect snack, appetizer, or cocktail staple from cheap and simple ingredients. Swapping out the sardines for another favored filling also makes this recipe really versatile.

Ingredients

  • 500 Grams Potatoes
  • 1 Can Spicy Spanish Sardines
  • 1/2 Stick Butter
  • 1 Piece Shallot minced
  • 1/2 Cup Flour
  • 1 Piece Egg beaten
  • 1 Cup Panko Bread Crumbs
  • Salt to taste
  • Vegetable Oil for frying

Instructions

  • Boil the potatoes until fork tender.
  • Peel and mash the potatoes in a mixing bowl.
  • Sautee shallots in butter.
  • Fold in the shallots, including the butter, and the sardines into the mashed potatoes. Season with salt as needed.
  • Form the potato mixture into balls.
  • Dredge the potato balls in flour, then dip in the egg, then roll in breadcrumbs.
  • Deep fry the potato balls until golden.
  • Drain on paper towels.
  • Serve.
