Ingredients

  • 4 Nectarines
  • 4 oz Digestive Biscuits
  • 2 tablespoons Coconut Oil
  • 4 oz Greek Yogurt
  • Small Bunch of Mint Leaves
  • 2 teaspoons Chia Seeds

Instructions

  • Place the digestive biscuits on a piece of parchment paper.
  • Fold it and crush the biscuits with a rolling pin.
  • Transfer to a bowl and add the coconut oil. Stir well.
  • Chop the mint and add it to the yogurt.
  • Use a hand mixer to puree the nectarines.
  • Add the chia seeds and set aside for 10 minutes for the seeds to absorb the liquid.
  • Assemble the dessert like this: place a layer of nectarine puree, a layer of biscuits and one of yogurt.
  • Repeat adding the layers until you run out of space.
  • Refrigerate for 1 hour before serving.
  • Garnish with mint leaves and enjoy.

I am a fan of quick desserts, especially because I usually don't have much time to cook and still I prefer to prepare my meals at home. I believe it is healthier this way for my entire family. Also cooking is one of passions and I spend time doing it whenever I can.

This recipe is great because it combines so many tastes and flavors, but it is also healthy as it doesn't contain sugar or any kind of sweetener, nor refined ingredients. It is suitable for both kids and adults at the same time.

The dessert is like a symphony of flavors: the sweetness of the nectarines, the fresh scent of mint and the richness of Greek yogurt. All with a great intake of Omega-3 from the chia seeds. You should definitely try it.

Place the digestive biscuits on a piece of parchment paper. You may choose any other kind of biscuits. I went for those because they are easier to break.

If you go for another type of biscuits, you should soak them in fruit juice or even a little bit of coffee before placing in the glasses. If you want an even more healthier alternative, choose oat flakes and cook them in a little butter.

Fold the parchment paper and crush the biscuits with a rolling pin.

Just crush the biscuits in small pieces, no need to turn them into some kind of meal.

Transfer the biscuit pieces to a bowl and add the coconut oil. Stir well. You may also opt for melted butter instead of coconut oil, it's your choice.

Chop the mint into very small pieces.

Combine the mint with the yogurt and stir well.

Use a hand mixer to puree the nectarines and combine them with the chia seeds. Set aside for 10 minutes. The seeds will absorb all the liquid and it will turn into a pudding.

To assemble the dessert, place layers like this: nectarine-chia pudding, biscuits, minty yogurt. Repeat until you have no room left.

Refrigerate for 1 hour before serving.
