Chocolate and Banana Souffle

Ingredients

  • 7 oz Dark Chocolate
  • 3 oz Sugar
  • 1 oz Butter
  • 4 Eggs
  • 1 Banana
  • Pinch of Salt
  • Powdered Sugar to garnish

Instructions

  • Preheat the oven to 325°F.
  • Pour some water into a pot and place it on medium heat.
  • Chop the chocolate and add it to a saucepan together with the butter.
  • Place the saucepan in the pot.
  • Melt the chocolate stirring continuously.
  • Crush the banana with a fork and add the sugar. Stir to mix well.
  • Pour the chocolate mixture over the banana.
  • Separate the yolks from the whites.
  • Add the yolks, one by one, to the chocolate-banana mixture and stir to mix.
  • Set aside to cool down.
  • Whisk the whites until stiff peaks form.
  • Slowly add the beaten whites to the chocolate mixture.
  • Grease 6 souffle forms with butter and divide the mixture.
  • Bake for 20 minutes in the preheated oven.
  • Dust with powdered sugar and serve immediately.

Souffle, a French classic, is in fact a baked mousse. The secret for a perfect souffle lies in how you whisk the whites: the more the better. I will explain to you how to do it so that you will get a nice and aerated dessert.

So, whenever you are in the mood for something sweet that contains a lot of chocolate you may choose to cook a souffle. It doesn't take long, you will only have to pay attention to some small details.

I find this dessert perfect for a cold winter night when watching a good movie. And I simply love the smell that comes out of my oven when it is baking.

Preheat the oven to 325°F.

You will need to melt the chocolate. If you don't have a double boiler, just half fill a pot with water and place it on the stove over medium heat.

Chop the chocolate and add it to a saucepan together with the butter. Take the pan and place it in the pot with the boiling water. Stir until the chocolate melts.

Crush the banana using a fork. It is best to use very ripe bananas, even the ones you don't feel like eating anymore. They are softer and give a smoother consistency to the souffle. Add the sugar and stir well.

Add the melted chocolate to the banana. Only stir until everything is well incorporated.

Separate the yolks from the whites and add them to the chocolate mixture one by one. Stir well after each yolk.

Now it is time to whisk the yolks. Use a mixer and process until stiff peaks form. The best test you can do is to turn the bowl upside down. If everything stands still it means that your are ready to move on.

Use a spoon to add the yolks little by little to the chocolate mixture. Stir with a spatula. It is not advisable to use the mixer at this point because the whites will lose their stiffness and your dessert will be sticky.

Grease 6 souffle forms with some butter and divide the mixture between them. Bake for 20 minutes in the preheated oven.

Take out of the oven and serve immediately, otherwise it will lose its consistency and texture.
