The cocoa powder gave the pizza crust a very pleasing earthy flavor. The harmony of those toppings was just spot on!
Ingredients
For the Cocoa Pizza Dough
- 1 Tablespoon Active Dry Yeast
- 1 Tablespoon Sugar
- 1 Cup Warm Water
- 1/4 Cup olive oil
- 3-1/4 Cup All Purpose Flour
- 1/4 Cup Unsweetened Cocoa Powder
For the Toppings
- 1 Cup Mozzarella Cheese
- 3 Strips Smoked Bacon cut into strips
- 1 Piece Bell Pepper cut into strips
- 2-3 Tablespoons Maple Syrup
Instructions
- Combine the water, yeast, and sugar in a bowl. Leave for 10 minutes.
- Whisk the flour, cocoa powder, and salt in a bowl.
- Add the active yeast and olive oil into the dry ingredients.
- Knead on a lightly floured surface.
- Set in a lightly oiled bowl and leave to rise for about an hour.
- Stretch the pizza dough into shape.
- Top the pizza.
- Bake for 25 minutes at 400F.
Chocolate does work in savory recipes too, that's for certain. This pizza dough takes relies on some of the earthy and bitter notes from unsweetened cocoa powder to prove that point.
Let's get some active dry yeast going in a bowl of warm water and sugar. Set it aside to bloom as you work on the other ingredients.
In a bowl, whisk together all-purpose flour, salt, and some unsweetened cocoa powder. I suggest that you stick with the ratios called for in this recipe, otherwise you may end up with a crust that is too overpoweringly bitter.
Add the active yeast mixture into the dry ingredients and give it a stir with a wooden spoon until everything comes together into a ball.
Transfer the dough onto a lightly floured work surface and knead on it until it becomes smooth and elastic. This will take somewhere around 5-7 minutes if kneading by hand.
Set the dough inside a lightly oiled bowl and leave it to rise, covered, for about an hour to an hour and a half.
It should rise to twice its original volume.
This dough came out very elastic and very suitable for tossing. Nothing beats hand-tossed fresh dough, as we all know.
What better choice of toppings for a chocolate-based pizza than these ingredients: smoked bacon, mozzarella cheese, bell peppers, and maple syrup? That flavor combination shouldn't be too hard to imagine and works well.
Bake the pizza for 25 minutes at 400F.
Bbq flavored bacon, smoky bell peppers, rich mozzarella, sweet maple syrup, earthy chocolate crust. . . this pizza easily made it on top of my favorites.
