This coconut flour pie crust really holds well together and is much easier to prepare than a traditional pie dough. The slight nutty flavor goes so well with a classic Hawaiian.
Ingredients
Coconut Flour Pie Crust
- 1/4 Cup + 2 Tablespoons Coconut Flour
- 1/4 Cup Water
- 1/4 Teaspoon Salt
- 1 Teaspoon Garlic Powder
- 1/4 Teaspoon Dried Sage
- 1/4 Teaspoon Dried Marjoram
- 1/4 Teaspoon Liquid Smoke
- 4 Eggs
Pizza Toppings
- 1/2 Cup Pizza Sauce
- 150 Grams Smoked Pork Loin thinly sliced
- 1 Cup Mozzarella Cheese
- 1 Piece green bell pepper cut into strips
- 1/2 Cup Pineapple Tidbits
Instructions
- Whisk eggs and water in a large mixing bowl.
- Whisk in the coconut flour.
- Stir in all remaining ingredients for the pie crust.
- Spred the batter evenly onto a non-stick pie pan.
- Bake for 10 minutes at 400F.
- Top the pizza crust with pizza sauce, cheese, pork, peppers, and pineapple tidbits.
- Broil for 8 minutes at 400F.
I’ve been cooking with coconut flour for a long time, using it for a range of purposes from breading fried food, to thickening soups and sauces, along with some light baking. For the most part, I tend to use it for its flavor rather than as a healthy choice like what I’ve tried to do for this recipe.
Going gluten-free ain’t supposed to mean passing up on the foods that may have come to be our favorites over time, pizza included. With the wide availability of specialty flours baking or making a tasty pizza dough shouldn’t be that much of a challenge at all.
Coconut flour is naturally grainy and “loose” compared to your typical all-purpose variety. As a result, it does require more binding material such as eggs. Notice how four eggs are called for in this recipe.
Whisk the eggs and add in the coconut flour. The “dough” will be very loose at the beginning. Keep on whisking and you’ll start noticing the mixture getting slightly denser.
Most recipes available online call for a heavy spice blend, trying to mask that nutty flavor of coconut flour. It’s not a bad taste at all, and rather than masking it, I’ve chosen a flavor blend to complement it.
With that familiar flavor of coconut, who wouldn’t think of Hawaiian Luau? With this flavor profile as inspiration, I tried to develop my pizza to leave an eating experience very much similar to having a Kalua pork dinner.
Liquid smoke definitely has to go in for that pit-roasted aroma, sage to enhance the flavor of the pork topping we’ll be adding, some marjoram for additional depth of flavor, and some garlic powder as a reference that will tie up all those flavors as they hit our palates.
The “dough” should resemble a very dense polenta by now. Loose but easily spreadable onto your pizza pan. Try using a non-stick pan if you have one. No need to grease your pan at all.
Bake for 10 minutes at 400F. You’ll be really impressed how neat and perfectly shaped this’ll come out of your oven.
Spread a good layer of your favorite pizza sauce on your par-baked crust. I went with a sweet tomato-based sauce to go with all the smoky flavors going on in this pizza.
Add your favorite cheese. Mozzarella is a safe choice – it’s good for melting, is gooey, and quite neutral tasting.
Now it’s time to reinforce that tropical Hawaiian vibe! Smoked pork loin, pineapples, and smoky bell peppers – all set!
Another 10 minutes of broiling in the oven and your Hawaiian pizza is ready!
Most recipes out there for a coconut flour pizza dough get bad reviews for being too crumbly and not holding together. They may have used too much liquid or too little binder. This dough definitely doesn’t have any of those problems. It held up really well, given the fairly generous topping I put on.

As you can probably guess, coconut flour does end up having a mild coconut flavor. This isn’t dramatic but you would find that baked goods often take on that slightly toasty flavor. Still, the effect is subtle enough that it shouldn’t cause a problem, even for people who aren’t very fond of coconut.
Working With Coconut Flour
Coconut flour offers advantages and disadvantages for cooking. One benefit is that it has a fairly light texture, which means you’re not going to end up with extremely dense cakes and loaves. The fats present in coconut flour are also saturated, which makes the flour more heat stable than most.
However, one catch is that you typically need eggs to bake with coconut flour. There are exceptions to that rule (like the pizza dough recipe you’re reading) but most recipes for coconut flour do require eggs. At the same time, coconut flour doesn’t substitute 1 to 1 with other types of flour. This can make it hard to use recipes that aren’t specifically designed for coconut flour.

To make coconut flour, you first have to separate out the coconut meat. This is typically done by opening the fresh coconut, draining the liquid and scraping the white flesh from the insides. That flesh then needs to be strained to remove excess liquid. After that, the flesh is typically baked at a low temperature.
The idea here is to completely dry out the coconut meat, which then leaves you with a dry and powdery substance that is coconut flour. This can then be used in your cooking and you store it in an airtight container.

I did bread recipes with coconut flour last night to rise, It did not rise, Now I want to turn that to pizza dough, unfortunately I can not use eggs because of shortage right now ,we are home for Coronavirus. Can I use one egg and something else?

Any kind of non-wheat flour won’t rise that much, but it will rise a tiny bit! The egg is just for binding, so one egg might suffice. You may be able to get some eggs in a carton if you can’t find fresh ones, there are some techniques to substitute eggs.
