Beef Schnitzel with Broccoli and Garlic Sauce

Ingredients

Beef Schnitzel

  • 14 oz beef sirloin
  • 2 medium Eggs
  • 1/2 cup Plain Flour
  • Salt and Pepper to taste
  • Vegetable Oil for Frying

Garlic Sauce

  • 2 Garlic Cloves
  • 7 oz Greek Yogurt
  • 3-4 Sprigs of Dill
  • Salt and Pepper to taste
  • 1 tsp Extra Virgin Olive Oil

Sautéed Broccoli

  • 1/2 Head of Broccoli cut in small florets
  • 1 tbsp Coconut Oil
  • Salt to taste

Instructions

The Beef Schnitzel

  • Cut the beef sirloin in thin slices.
  • Beat the eggs in a small bowl and season with salt and pepper.
  • Place the flour on a plate.
  • Dip one slice of meat in egg mixture and then transfer to the flour plate. Coat with flour on both sides. Repeat for all the slices.
  • Heat the vegetable oil in a large skillet.
  • Fry the schnitzels 2-3 minutes on each side.
  • Remove from the pan an set aside.

Prepare the Broccoli Sautee

  • Melt the coconut oil in a pan.
  • Add the broccoli florets and season with salt and pepper.
  • Cook until soft, for about 5 minutes.

The Garlic Sauce

  • Crush the garlic cloves.
  • Chop the dill.
  • Combine all the ingredients: garlic, salt, dill, olive oil and Greek yogurt. Stir well.
  • Serve the schnitzels with broccoli sautee and garlic sauce.

Schnitzel and fries are a quite common dish in Europe. Usually the schnitzel is made out of chicken or pork. For this recipe I have replaced the fries with broccoli and I've used beef for the schnitzels to go for a healthier version. I have adapted this recipe in order to cook it fast because I find it hard to cook something very complicated when I come back from work.

My kids don't usually like broccoli. They refuse to eat when I steam or boil it. But they enjoy the sauteed version. It is true that this vegetable gets a better taste with a little bit of olive oil. Also this way of cooking offers a great advantage because broccoli keeps all its vitamins and minerals due to the short amount of time when it is thermally processed.

As for the beef, it will remain tender and even tastier with its egg crust.

There are quite a few ingredients for this recipe and it is really easy to grab them when you come home from work.

To prepare the schnitzels, you should first slice the meat in thin pieces. Beat the eggs and season well with salt and pepper. Dip each slice of meat into this mixture.

Spread the flour on a plate. Place the beef slices previously dipped in the egg mixture on the plate and coat well with flour.

Heat the vegetable oil in a large skillet and add the schnitzels. Fry them for 2-3 minutes on each side. Watch carefully because the egg crust burns very easy. Don't leave the pan unattended, stay by its side all along the cooking process if you want the perfect schnitzels. After the cooking time is over, remove from pan and set aside. Don't let the meat in the cooking pan because it will absorb a lot of oil and you won't be able to eat it anymore. In fact, you can place the schnitzels on paper towels to get rid of the extra oil.

In order to prepare the broccoli, melt the coconut oil in a skillet.

Add the broccoli florets and season with salt and pepper. Saute for about 5 minutes, until soft and tender.

In the end or before you cook the broccoli, you can prepare the garlic sauce. Crush the garlic, chop the dill and combine all the ingredients foo the sauce: Greek yogurt, garlic, dill, olive oil and salt. Stir well and serve over the beef schnitzels and broccoli sauté. Enjoy!
