Really flavorful for something so healthy! The subtle flavor of curry just made so much difference.
Servings: 6 servings
Ingredients
- 1 Large Zucchini diced
- 1 Medium Yellow Squash diced
- 1 Large Red Onion sliced
- 1 Medium Eggplant diced
- 8 oz. Button Mushrooms
- 2 Tablespoons olive oil
- 2 Cloves garlic minced
- 1 Teaspoon Curry Powder
- 2 Cups Chickpeas drained and rinsed
- 1 Cup Fresh Parsley chopped
- 1.5 Tablespoons lemon juice
- 2 oz. Feta Cheese
- Salt
- Pepper
Instructions
- Toss all vegetables together with chickpeas, olive oil, curry powder, garlic, salt, and pepper.
- Spread on a baking sheet and roast for 15-20 minutes at 180C, stirring halfway through the cooking.
- Toss the roasted vegetables with the lemon juice, parsley, and feta. Season with more salt and pepper if needed.
