Curried Vegetable and Chickpea Salad A quick roasted vegetable salad that the whole family will enjoy. Healthy can indeed be yummy! 1 Large Zucchini (diced)1 Medium Yellow Squash (diced)1 Large Red Onion (sliced)1 Medium Eggplant (diced)8 oz. Button Mushrooms2 Tablespoons olive oil2 Cloves garlic (minced)1 Teaspoon Curry Powder2 Cups Chickpeas (drained and rinsed)1 Cup Fresh Parsley (chopped)1.5 Tablespoons lemon juice2 oz. Feta CheeseSaltPepper Toss all vegetables together with chickpeas, olive oil, curry powder, garlic, salt, and pepper.Spread on a baking sheet and roast for 15-20 minutes at 180C, stirring halfway through the cooking.Toss the roasted vegetables with the lemon juice,…

Ingredients

  • 1 Large Zucchini diced
  • 1 Medium Yellow Squash diced
  • 1 Large Red Onion sliced
  • 1 Medium Eggplant diced
  • 8 oz. Button Mushrooms
  • 2 Tablespoons olive oil
  • 2 Cloves garlic minced
  • 1 Teaspoon Curry Powder
  • 2 Cups Chickpeas drained and rinsed
  • 1 Cup Fresh Parsley chopped
  • 1.5 Tablespoons lemon juice
  • 2 oz. Feta Cheese
  • Salt
  • Pepper

Instructions

  • Toss all vegetables together with chickpeas, olive oil, curry powder, garlic, salt, and pepper.
  • Spread on a baking sheet and roast for 15-20 minutes at 180C, stirring halfway through the cooking.
  • Toss the roasted vegetables with the lemon juice, parsley, and feta. Season with more salt and pepper if needed.
