  • 1 tablespoon Quick-Cooking Oats
  • 1 tablespoon Cooked Bacon Bits

How about a quick and nutritionally-dense “muffin” for breakfast? Well, this technically ain't a muffin by conventional definition. . . no flour, no baking. . . but it does look and feel like one. It's got peanut butter, oats, bacon bits, and an egg. . . sounds like breakfast right? And it is quick to do, needing roughly two minutes from start to finish! Interested so far? Read on.

We begin by rendering some bacon bits really crisp in a pan. When done, set them on some laid out paper towels to drain off any excess fat.This step can be done in advance or to totally save on actual prep time, you can always use store-bought crisped up bacon bits.

Get all of your ingredients into a microwave safe mug, mix well, and your practically done! I told you this will be fast.

Be sure to use creamy peanut butter to make stirring it together with all the ingredients easier. Also, keep in mind that this will take only a minute in the microwave so you'll want to use oats of the quick-cooking variety.

The peanut butter and egg would be the essential “caking” ingredients for this recipe, meaning you can replace the bacon and oatmeal with practically any component you wish. Chocolate would definitely be on top of the list for excellent additional options.

Here are a few suggested combinations, most of which I've already tried personally:

  • Chocolate, Banana, Oatmeal
  • Peanut Butter and Canned Blueberries
  • Ham and Parmesan
  • Banana, Oatmeal, and Chia
  • Smoked Salmon and Cream Cheese

I haven't tried Nutella, or any similar hazelnut spread, in place of the peanut butter but really think it would work out excellently.

Once everything's mixed up evenly, get the mug into the microwave and give it a minute to “bake”, going by 30-second intervals. Going for one continuous minute could cause the “cake” to rise up uncontrollably and spill out of the mug.

I've really got nothing left to say but all praises for this quick and super-easy recipe. To be fair, this mug cake does come out delicious too!

By the way, this cake unmolds clean out of the mug, making it perfect for a bring-along breakfast or snack.

One last tip: leave some bacon bits to garnish the top of your mug. This way, your cake would come out of the microwave picture-perfect like the one below.
