Fried Zucchini & Feta Cheese Patties with Tzatziki

This recipe offers a great combination of tastes and flavors, bringing together zucchini, garlic, dill and yogurt. The patties are crunchy on the outside, but soft and tender on the inside.

Ingredients

Zucchini Patties

  • 2 Medium Zucchinis
  • 1 Green Onion
  • Small Bunch of Dill
  • 1 Egg
  • 1/2 cup Feta Cheese
  • 1/4 tsp Nutmeg
  • 1/3 cup All Purpose Flour
  • 1/3 tsp Baking Soda
  • Salt and Pepper to taste
  • Vegetable Oil for Frying

Tzatziki

  • 1 cup Greek Yogurt
  • 1 Cucumber
  • 1 Garlic Clove
  • 1/2 tsp Dried Oregano
  • 1 tsp Extra Virgin Olive Oil
  • Salt to taste

Instructions

Zucchini Patties

  • Grate the zucchinis.
  • Add some salt and stir with your hands.
  • Place the grated zucchini in a sieve over a pot to release the juice and set aside for 15 minutes.
  • Squeeze the grated zucchini to get rid of most of the liquid and transfer to a bowl.
  • Chop the onion and the dill and add to the bowl.
  • Add the crumbled Feta cheese and the nutmeg. Stir well.
  • Beat the egg and add it to the zucchini mixture.
  • In a separate bowl combine the flour with the baking soda.
  • Little by little add the flour mixture to the zucchini bowl.
  • When the ingredients stick together and the mixture can be shaped, start forming the patties.
  • Heat the vegetable oil in a pan.
  • Fry the patties for 4-5 minutes on each side until golden brown.

Tzatziki

  • Place the Greek yogurt in a bowl.
  • Crush the garlic and add to the yogurt.
  • Chop the cucumber in very small pieces and add to the other ingredients.
  • Stir in the oregano and the olive oil.
  • Season with salt to taste and stir well.
  • Serve the patties with tzatziki and enjoy.

Now, that the summer is here and you can find fresh vegetables all over the place, it is time to prepare some zucchini patties. They are delicious in combination with Feta cheese and the star of this recipe is tzatziki, of course. It brings a fresh note to the fried patties.

I also didn't use nutmeg very often with this kind of food before because I usually associate it with desserts. But it fits perfectly well in the patties, giving them a slight exotic flavor. Make sure you don't use much, just a bit to arouse the eater's curiosity 🙂

This dish is very easy to cook. If you use your food processor, there are few things left to do. You need a few ingredients and about 30 minutes of your time. Nothing more and nothing less. Just give them a try and you won't be sorry. And don't imagine that they are not filling if they don't contain any meat: you won't need anything else for a long time after you enjoy these patties with tzatziki.

First of all, grate the zucchinis. I used the food processor and everything was ready in 2 minutes. You may also use a grater. Grab some salt, stir into the zucchini, and place the mixture on a sieve, over a pot or a bowl. These veggies are full of water and they need to sit like this for 15 minutes to release all the liquid. Make sure you don't add too much salt (like I did the first time I cooked them) because you will also add Feta cheese which is quite salty.

After that squeeze the zucchini very well to get rid of the water and transfer to a bowl. Chop the green onion and add it to the veggies. I simply love summer because you can find all kind of greens to prepare healthy foods.

Next, chop the dill and add to the same bowl. Dill is one of my favorite herbs, so I have added a lot, but you may try with a smaller bunch. I wouldn't recommend replacing the dill because it fits perfectly with the tzatziki sauce (you will see the recipe below), but if you must, then go for dried oregano. And add some more zucchini as the dill brings a lot of texture to the patties, unlike the oregano.

Add the crumbled Feta cheese. You may also replace it with other kind of cheese, like cow or goat cheese. I also used simple sheep cheese for these patties (usually Feta is made or should be made out of a combination of goat and sheep milk) and it worked out perfect. Just make sure your cheese is a little bit salty.

It is now time to add the nutmeg. As I previously said, I often use nutmeg combined with cinnamon, I believe it is something that has to do with gingerbread which I cook a lot. Lately, I have tried to match it with some other foods and it is delicious.

Stir well for the flavors to mix.

Beat the eggs and add them little by little so the composition won't get too liquid.

In a separate bowl, combine the flour with the baking soda. Stir it gently into the patties mixture. If you need, you may add some more beaten eggs or even a teaspoon of water.

Shape the patties. Heat the vegetable oil and add the patties. Cook them for 4-5 minutes on one side, until golden brown.

Flip them over and cook for 5 minutes more on the other side. When they're done, remove from the pan and place them on some paper towels to absorb the excess oil.

You will see that, even if zucchinis are the main ingredient of the patties, you will also be able to perfectly feel the cheese taste.

Meanwhile, you may prepare the tzatziki. This sauce is native to Greece and it is perfect for the hot summer days as it is fresh and tasty.

Start with the Greek yogurt.

Crush the garlic and add it to the yogurt bowl.

Chop the cucumbers in small pieces and place them in the bowl. The original tzatziki requires for grated cucumbers, but it is faster to only chop them. And the taste remains the same.

Sprinkle some oregano. This is one of the key ingredients in Greek dishes and I can assure you that you won't find a more flavored oregano in other country. I believe it's because of the climate which is perfect for this plant.

And, of course, extra virgin olive oil couldn't miss from this combination. Add some salt, stir everything well and serve with the zucchini patties.
