Lemony Beef with Rosemary Potatoes

Ingredients

Beef Sirloin

  • 14 oz beef sirloin
  • 2 New Potatoes large
  • Few Rosemary Sprigs
  • Salt and Pepper to taste
  • Vegetable Oil for Frying

Marinade

  • 1 Lemon juiced
  • 2 Garlic Cloves
  • Salt and Pepper to taste

Instructions

Marinade

  • Squeeze the lemon and transfer the juice to a bowl.
  • Crush the garlic and add to the lemon juice.
  • Season with salt and pepper to taste and stir well.

Beef and Potatoes

  • Rinse the meat and pat dry. Slice in 0.5 inch thick pieces.
  • Place one piece of meat in the marinade bowl and rub it with your fingers. Repeat for all the slices.
  • Slightly grease a pan with cooking spray.
  • Place the beef in the skillet and cook for 2-3 minutes on each side.
  • When you flip over, add the remaining marinade in the cooking skillet, coating the beef.
  • When the meat is ready, remove from the pan and set aside.
  • Cut the potatoes in very thin slices.
  • Heat the vegetable oil in the pan and add the potatoes.
  • Sprinkle with salt and pepper and add the rosemary leaves.
  • Cook until they get golden on one side and then flip over.
  • Serve with the lemony beef.

Meat with potatoes can be considered a classic. Everybody loves fries and beef. This recipe aims to reinvent the old dish. The lemon-garlic marinade adds a citrus flavor and a little sour taste to the meat. But it goes very well with the rosemary crispy potatoes.

Lemony beef with potatoes is ready in just 20 minutes so you won't have to wait for much time to enjoy it. You may serve it with a huge summer salad with tomatoes, cucumbers and lots of green onion. Or you may prepare a garlic sauce to add some extra taste.

I thought of recreating this recipe because I remembered the days of my childhood when my mother used to prepare me fried chicken with fries or mashed potatoes. I simply loved that food. I could eat it over and over again. Just like me, my kids also enjoy eating this and I wanted to bring something new to it.

You only need 4 ingredients and some essentials, like rosemary, for this recipe. Just grab those and start cooking.

Lemony beef ingredients

Start with the marinade.

I always brush the lemons with a kitchen sponge and baking soda. The zest contains a lot of pesticides and I can't find organic all the time. Another way to get rid of chemicals is to soak the lemons for 30 minutes in a vinegar solution: 1 part vinegar to 2 parts water. This is why I use only organic lemons or oranges when I need the zest.

After brushing it, squeeze the juice and transfer to a bowl.

Squeezing the lemon

Crush the garlic and add it to the juice. Season with salt and pepper and stir well. Take each piece of meat and coat it with the marinade. Brush with your fingers. I always prefer “cooking” with my bare hands: squeezing the lemon, brushing the meat, forming the dough when necessary, etc because I can feel the texture of all the ingredients.

Preparing the marinade

Cut the beef in 0.5 inch thick slices.

Grease a non-stick skillet with cooking spray. Place the meat and cook for 2-3 minutes on each side. When you flip it over pour the rest of the marinade over the beef. After it's done, remove from the heat and set aside. Clean the pan to prepare it for the potatoes.

Cut the potatoes in very thin slices so that they will cook fast and become crispy.

Heat the vegetable oil in the pan and add the potato slices when it is hot. Otherwise thy will absorb a lot of oil and soften. Sprinkle salt to prevent the oil from popping out of the pan. Add some pepper and rosemary leaves. Cook until the edges become golden…

… and then flip over. You don't need to keep all the slices in the pan. When some of them are ready, remove from the heat so they don't get burn.

You can replace the potatoes with other veggies, if you want to. A good substitute would be zucchini which can also be fried. Or you may try some vegetable stir-fry with bell peppers, carrots, broccoli and cauliflower.

Serve the lemony beef with the crispy rosemary potatoes and enjoy.

Squeeze some more lemon juice over the beef if you like the taste.
