Shawarma is a Middle Eastern dish you will probably find in a fast food. And you will love it for certain. And what's not to like? It is filled with juicy meat (most often beef, but you can also find chicken or even mixed filling:beef and chicken), fries, lots of veggies, pickles, mayonnaise or some other sauce and many spices. All that being said, I believe you have already figured it out that it is a caloric bomb.
Classic shawarma requires some time to cook because the meat needs to be marinated for 6-8 hours. And after that it is slowly cooked on some tall piles and cut with huge knives. It is the way they do it in the restaurants. If you want to replicate it at home, you will also need the time to marinate the meat.
Bottom line, shawarma is not that hard to cook. If you want to use the marinade, just coat the meat before going to sleep or to work and it will be ready by the time you come back.
But I have good news: you may enjoy a shawarma without marinating and without many calories, just by replacing some ingredients. And the best part is that it only takes 25 minutes to cook and assemble. You will only need some beef, cabbage, carrots, tomatoes, pita bread and cream cheese and sage leaves for the sauce.
Start by preparing the sauce, this way the flavors will have time to combine. Mix the cream cheese in a bowl until it gets fluffy. It will spread easier on the pita bread. Chop the sage leaves and add to the bowl. Sage has an unmistakable flavor and it is just a little spicy. It combines very well with all kind of veggies.
I chose this sauce because it's a lot more healthier than the classic mayonnaise. Another option would be tzatziki or some combination of tahini and yogurt.
Season with salt and pepper and stir well.
Chop the meat in very small pieces. Grease a pan with cooking spray and add the beef pieces. Cook for about 3-4 minutes until it gets the desired doneness. It is better for the meat to be well cooked for this recipe so it doesn't release much juice and mess things up. When it's done remove from the pan and set aside.
Prepare the veggies for the shawarma: chop the cabbage, grate the carrots and slice the tomatoes.
You may use any vegetables you like: cucumbers, pickles, replace the cabbage with salad leaves, saute some veggies and place them on the pita and many others. Just let your imagination run free.
To assemble the shawarma, place the pita bread on a plain surface. First of all spread the sauce evenly, making sure you don't reach the edges if you want to keep your hands clean when you eat.
Add some cabbage…
… and some grated carrots.
Top with tomato slices…
… and add the meat.
Roll the pita and secure with a tooth pick, or maybe more if needed.
If you are the type of person which prefers it hot, simply add a Chile peppers, sliced, together with the seeds and you will certainly be on fire.
Enjoy!
