Fried Cheese with Balsamic Tomatoes

Although fried cheese is usually seen as an appetizer, if you add some sauteed veggies with balsamic vinegar and garlic you will enjoy a wonderful dinner.

Ingredients

Fried Cheese

  • 10 oz Emmentaler Cheese
  • 1 Egg
  • 1/2 cup Breadcrumbs
  • Salt and Pepper to taste
  • Vegetable Oil for Frying

Balsamic Tomatoes

  • 4 Large Tomatoes
  • 1 red bell pepper
  • 2 Garlic Cloves
  • 1/2 tsp Dried Oregano
  • Salt and Pepper to taste
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Balsamic Vinegar

Instructions

Fried Cheese

  • Beat the egg.
  • Place the breadcrumbs on a plate, and add salt and pepper.
  • Cut the Emmentaler in thick slices.
  • Coat the cheese with breadcrumbs, dip in the beaten egg, and then again in breadcrumbs.
  • Heat the vegetable oil in a frying pan.
  • Cook the cheese for 3-4 minutes on each side.

Balsamic Tomatoes

  • Slice the tomatoes and the garlic and chop the bell pepper.
  • Heat the olive oil in a skillet and add the garlic. Cook for 1 minute until fragrant.
  • Add the other veggies and saute for 4-5 minutes until soft. Keep stirring.
  • Season with salt and pepper, and add the oregano and balsamic vinegar.
  • Give it a stir and remove from heat.
  • Serve with fried cheese.

It is often said that fried cheese is an appetizer. But I could hardly consider it like this because it is very filling and it would be impossible for me to eat anything else after that. And if you add some sauteed veggies you will have a meal that will keep the hunger away for many hours.

For example, my kids love to nibble. They keep asking me for a banana, some almonds, some strawberries, some sunflower seeds, and many others. But when I cook fried cheese they stop nibbling. The same thing happens to me.

I must confess that I adore the texture of the fried cheese, that moment when you cut a piece and it is tender and melts into your mouth. The sauteed veggies bring some moisture to the crunchy cheese. And you may even consider that your meal is healthier because you will have a fiber intake.

This recipe is very quick, you just need to cut and fry the cheese instead of grating and combining more types of cheese.

You will need: some Emmentaler cheese, an egg, breadcrumbs, tomatoes, red bell pepper and garlic for the sauteed vegetables.

Cut the cheese in slices, about 0.8” thick. You will find a lot of recipes which combine Emmentaler with Gouda and Parmesan. Any of these cheeses will work, and even their combination. I wanted to prepare a quick recipe, so I chose the most simple version. Otherwise I would have to grate the cheeses, combine them with some spices and create some patties. I will cook this next time when I will be able to stay longer in the kitchen.

Beat the egg and place the breadcrumbs on a plate. Add salt and pepper to taste and mix well. Coat the cheese with breadcrumbs, dip in the egg mixture, and then coat with breadcrumbs again. This way you will get a crunchy crust.

Heat the vegetable oil and add the cheese slices. Fry for 3-4 minutes on each side until golden brown.

Flip over and cook for 3-4 minutes more. When done, remove from the pan and transfer on paper towels to absorb the excess oil.

Meanwhile heat the olive oil in a skillet and add the garlic. Cook for 1 minute until fragrant.

Slice the tomatoes and chop the bell pepper. Add all the veggies to the skillet. You may use other vegetables if you prefer, whatever you like: zucchinis, eggplants, mushrooms, and many more.

Cook for about 4 minutes until soft. After that, add the oregano, season with salt and pepper and pour the balsamic vinegar. Cook for 1 more minute.

Serve the fried cheese with balsamic veggies, accompanied by a large raw vegetable salad.
