Ingredients

Bacon Wrapped Beef

  • 9 oz beef sirloin
  • 7 oz bacon thinly sliced
  • Salt to taste

Simple Summer Salad

  • 2 Fresh Tomatoes ripe
  • 2 Cucumbers
  • 1 Red Onion
  • Few Basil Leaves
  • Salt and Pepper to taste
  • 1 tbsp Extra Virgin Olive Oil

  • Rinse the meat and chop it in rectangle or square slices, 0.5 inch thick.
  • Slice the bacon very thinly.
  • Lightly grease a skillet with cooking spray.
  • Heat the skillet and add the beef slices.
  • Cook for 2-3 minutes each side.
  • Season with salt while cooking.
  • Remove from the skillet and set aside.
  • Clean the skillet if necessary and add the bacon slices.
  • Cook for 1 minute each side, until light brown.
  • Remove from the stove and set aside.
  • To assemble the wraps, place a bacon slice on a plate.
  • Add one piece of beef and roll the bacon slice.
  • Secure with a toothpick.

  • Slice the tomatoes and cucumbers.
  • Combine all the 3 ingredients.
  • Add the olive oil and stir well.
  • Season with salt and pepper to taste.

Most of the people would like to get home from work and find their dinner ready. When everybody in the family is working this is not possible. But there are some quick recipes which can be cooked in an instant and don't require many ingredients and much effort.

This recipe enters the category of healthy dishes because it combines meat with vegetables and since summer is almost here most of the veggies begin to taste better and to be more flavored. Usually nutritionists recommend us to eat some dull meat (like chicken breast) with salad. This is quite boring and not very tasty.

What if we replace the chicken breast with some well cooked beef covered with juicy and sweet bacon? Beef sirloin is not a fatty meat, therefore the bacon will bring a little bit of taste and will make these wraps softer. Add a summer salad with a lot of basil and you will have a great dinner to enjoy.

Slightly grease a skillet with cooking spray and place it over medium high heat. Cut the meat in squares or rectangles (you may adjust the shape later) 0.5 inch thick and place the pieces in the skillet. When you cook beef it is important to know the way you want it: you want your meat to be medium cooked or well done? For a medium cooked steak with 0.5 inch thickness you need to cook the meat 2-3 minutes each side. If you want a well cooked beef, add 1 minute for each side.

You will probably need to clean the skillet before you cook the bacon. Slice the bacon as thin as you can using a very sharp knife. Bacon adds a bit of sweetness to the beef because it has a lot of fat.

Assemble the wraps. Place a bacon slice on a plate and put a piece of beef on it. Roll the wrap and secure with a toothpick. It is better to eat these two together rather then separately. The beef will seem more tender if associated with the bacon.

After you finish with the wraps, start preparing the salad. The secret for an extraordinary summer salad is how you prepare the onion. Slice the red onion very thinly and rub it with some salt. Leave it for 2-3 minutes so the salt will get a little bit juicy. This way it won't have that pungent taste anymore, but it will be flavored and sweet. So, if you want a delicious salad with a few ingredients don't forget about the onion.

Slice the tomatoes and cucumbers to add to the salad. You may also use a lot of other veggies such as radishes, green onion, spinach leaves, kale or even white cabbage. I prefer my salads quite simple so I can feel the taste of every tiny ingredient. When a food has a lot of ingredients there are two possibilities: you can't feel anything because there's a mess in there or… you combine all the flavors correctly and you have a masterpiece in front of you.

Combine all the ingredients for the salad, add the olive oil and add some more salt if necessary. You better taste it first because you already added salt to the onion. Season with pepper and stir well.

Chop the basil leaves and mix them into the salad. I love basil, it is one of my favorite herbs. I use a lot, but if you don't enjoy the taste that much, you may add less leaves. A great addition would be lemon basil which will give a citrus flavor to your salad, making it fresh. You can always substitute basil with fresh parsley or even coriander. But from my point of view the combination basil-tomatoes rocks!

I believe I will try chicken wraps the next time and I will add a greens salad, made from radishes, cucumbers, green onion and spinach leaves. Everything with a drizzle of balsamic vinegar.
