I believe there is nobody out there that doesn't like ice cream. I could eat it in every single moment of my life, even if you wake me up in the middle of the night. It is by far my favorite dessert. Just when the sun rays become warmer in the spring, my kids come to me asking for ice cream.
And since it happened to me more than once to buy melted or re-frozen ice cream from the supermarket, I have decided to prepare a lot at home so that I don't put my children's health in danger. Re-frosted ice cream is very dangerous because it may contain a bacteria (Listeria) which may even be life threatening.
You should know that there are plenty of ice cream recipes and the following is one of the most simple of all. You will only need four ingredients (bananas, raspberries, coconut oil and honey) and a food processor.
Peel and chop the bananas and place the pieces in a bowl. Take the bowl to the freezer for 5-6 hours until the bananas freeze.
Place the frozen banana pieces into a food processor.
Wash the raspberry and place them in a sieve to get rid of any extra liquid.
Add all the ingredients to the food processor and mix well, until you get a smooth and soft consistency. It may take only one minute for a strong blender, but you should leave it longer if your processor is less powerful.
I really love this kind of fruity ice cream. It is also healthy because it doesn't contain any sugar or any kind of food additive. It is perfect even for young children.
I poured the mixture into silicone molds to get ice cream on stick, my kids' favorite. But you may run it through an ice cream maker. Or simply put it in the fridge and don't forget to mix every 30 minutes so it will have an aerated consistency.
Freeze for at least 4 hours or overnight.
Take out the popsicles and enjoy!
