Curried Vegetable and Chickpea Salad

A quick roasted vegetable salad that the whole family will enjoy. Healthy can indeed be yummy!

Ingredients

  • 1 Large Zucchini diced
  • 1 Medium Yellow Squash diced
  • 1 Large Red Onion sliced
  • 1 Medium Eggplant diced
  • 8 oz. Button Mushrooms
  • 2 Tablespoons olive oil
  • 2 Cloves garlic minced
  • 1 Teaspoon Curry Powder
  • 2 Cups Chickpeas drained and rinsed
  • 1 Cup Fresh Parsley chopped
  • 1.5 Tablespoons lemon juice
  • 2 oz. Feta Cheese
  • Salt
  • Pepper

Instructions

  • Toss all vegetables together with chickpeas, olive oil, curry powder, garlic, salt, and pepper.
  • Spread on a baking sheet and roast for 15-20 minutes at 180C, stirring halfway through the cooking.
  • Toss the roasted vegetables with the lemon juice, parsley, and feta. Season with more salt and pepper if needed.
