Crispy Baked Lemon Pepper Wings

Ingredients

  • 4 pounds Party Wings
  • 3 tbsp Lemon Pepper Seasoning
  • 1 tsp Garlic Powder
  • 1/4 cup olive oil Extra Virgin
  • 1/4 cup Butter Unsalted

Instructions

  • Preheat oven to 425 F.
  • Mix oil, 2 tablespoons lemon pepper seasoning and garlic powder in a Ziploc bag.
  • Put chicken in the bag and toss to completely coat.
  • Spread chicken out on a baking sheet. Be sure not to crowd them so they have a chance to cook evenly.
  • Bake for 20 minutes. Turn over and bake for another 10 minutes. Remove wings from oven.
  • While chicken in in the oven, mix melted butter and 1 tablespoon lemon-pepper seasoning. Once chicken is done brush liberally onto wings (stir butter mixture as you go to make sure you have plenty of seasoning for each wing).
  • Place on platter and serve immediately.

Notes

1. If you’re making these wings for more than 8 people, just multiply the recipe accordingly.
2. If you can’t find lemon pepper salt, you can make your own by combining equal parts kosher salt, lemon juice, and black pepper.

You might not have lemon pepper seasoning on hand, but you can make your own! If you need to make your own pretty easily. The basic ingredients are exactly what you would guess:

  • lemon zest
  • pepper
  • salt

The type and amount you use is up to you and what you have on hand. I use fresh ground pepper and sea salt. The ratio I use is 1:2:1, meaning 1 tablespoon lemon zest, 2 tablespoons black pepper, and 1 tablespoon salt. You can tweak this ratio to fit your taste. Since the basic recipe calls for just 3 tablespoons of the seasoning, you shouldn’t need to make too much of this for a small serving of wings. However, if you’re making these for a party, you’ll probably want to double or triple it!

I had some friends show up to my house for a last minute game night this week and I had no food prepared, but there was no need to panic because I remembered the wings I had just purchased the day before. Perfect! Now what to do with them?

Crispy Baked Lemon Pepper Wings! My mouth immediately began to drool at the thought. I knew that I could pop these babies in the oven and have them ready within the next 30 minutes to feed a hungry crowd that somehow went from 3 to 8. Sheesh!

Lemon Pepper Seasoning

There’s a really cool international farmers market not too far from my house, so I’m always stopping in to pick up some different herbs and spices. During this trip I picked up some Lemon Pepper Salt – it has a strong lemon flavor that goes great with chicken and seafood.

I tossed the lemon pepper seasoning into the Ziploc bag with olive oil and mixed it around. Since the lemon pepper seasoning is a mixture of salt, pepper, and lemon, you don’t have to put any extras into the bag.

Then I tossed the chicken in and mixed everything in the bag until the chicken was well coated (The longer the chicken sits in the bag, the better, but if you’re short on time it’s fine to only leave the wings in for a little).

I placed the chicken on a baking sheet skin-side up for optimal crunch, while making sure not to overcrowd them on the pan.

I then placed them in a 425°F degree oven and let them bake for about 20 minutes (skin-side up).

While the wings were baking I melted 1/4 cup butter and sprinkled in 1/2 tbsp of the lemon pepper seasoning along with the juice from half a lemon (be sure to check the butter sauce for flavor before tossing the chicken).

Once the wings had been in the oven for about 20 minutes, I flipped them to get the other side nice and golden brown. I also squeezed some fresh lemon juice over the chicken to get a bit more of a lemon-y bite.

After about another 10 minutes the wings were done. The juices were running clear and the skin was nice and crispy! I took them out of the hot oven and off the hot baking sheet, then tossed them in the butter mixture I made. I served them immediately and they were gone before I could remove the second batch. Enjoy!

When To Serve Chicken Wings

Chicken wings are always delicious. But, there are a few places where they particularly shine.

  • Finger food at a party. Parties need delicious, familiar, and easy to eat foods. Chicken wings meet all those requirements. Sure they’re a little messy, but that’s simply part of the fun.
  • For a picnic. Chicken is so good at a picnic, as it gives everyone a hit of protein, helping to keep them satisfied. You’ll just need to make sure the chicken stays cold, particularly if it is a hot day.
  • As a snack for movie watching. Popcorn, chips, and candy are classic movie watching snacks, but these are all unsatisfying and it’s easy to over-consume them. In contrast, chicken wings are savory and offer plenty of protein. That’s a win-win.
  • During the game. This one almost goes without saying, as chicken wings are classic snacks for watching any big game.
  • As part of a meal. You can also serve chicken wings as part of a meal. You’ll just need some side dishes to go with them, like a big plate of steamed veggies and some potatoes.

Marinade The Wings First

This recipe combined lemon pepper seasoning with olive oil to create a liquid seasoning mix. This then functioned like a marinade, helping to impart plenty of flavor to the chicken. Marinades are helpful, as they keep your chicken moist.

Crucially, marinades reduce the risk that your chicken wings will dry out when you’re cooking them.

Try Bake Them On A Rack

A rack allows air to circulate around your wings better and means that any liquid released drips away from the wings. Both features are important for ensuring your wings crisp up as you want them to.

However, this isn’t essential. Many people use a foil-lined pan instead, as that approach makes cleanup easier.

Don’t Crowd The Chicken

It’s tempting to jam as much chicken as you can on your pan, but doing so leads to steam and soggy chicken wings. So, if you’re feeding a crowd, you might need to cook the wings in batches, rather than all at once. This way all your chicken wings end up crisp and delicious.

Remember To Turn The Wings

You’ll need to flip your chicken wings as they’re cooking – normally at the halfway point. Some people change the temperature here too, but that isn’t essential.
