Chicken is one of those ingredients that works well in simple dishes and also in complex ones. Likewise, it can be a great ingredient in the slow cooker, especially as it can be paired with so many different flavors. These are just 10 of my favorite slow cooker chicken recipes to share.
But, many people shy away from using chicken this way. Much of the issue is simply because it seems so difficult to get chicken right, especially if you’re dealing with chicken breasts. After all, overcooked chicken is dry, stringy and completely unappealing, while you certainly cannot afford to undercook the chicken.
But, the slow cooker takes a lot of guesswork out of the process and actually makes it easier to get the food you are looking for. So, with the right recipe, you can be sure that you will get perfect results every time. And, with that in mind, the recipes on this list are a great place to get started. That being said, let’s get into these amazing slow cooker chicken recipes designed by…me!

10. Filipino Chicken Adobo Tacos with Fresh Mango Salsa
There is a lot going on with these Chicken Adobo Tacos but don’t let that put you off. Instead, the idea is just a variation of Filipino adobo, just in the form of a taco. The idea is perfect for anybody who loves tacos but wants something a little bit different. I’ve also found that this recipe is a hit when I have guests over for dinner, especially as the tacos are fun to put together.
You could also use the chicken in a different way. For example, I could imagine making something similar with wraps or serving it as a warm salad on top of some greens. Whatever your preference, the flavors of the chicken and the salsa come together perfectly and look stunning as well.
9. Poached Chicken in Tarragon Cream Sauce
I love the way that this Poached Chicken turns out, because it looks so simple on the plate but the flavors are more than you would expect. You can also vary the idea up a little by adding in ingredients like basil or pesto. For that matter, this recipe acts as a great base that you can experiment with as time goes on.
8. Fricasse de Pollo (with green olives, capers, and raisins)
If you want something unusual, this Fricasse de Pollo may be a good choice. The name here basically refers to the method of cooking, along with the meat that is used. But, there is also a lot more going on here than a basic fricasse de pollo recipe. In particular, the dish offers a considerable complexity of flavors, including some that you wouldn’t expect.
The end result is a chicken stew that is truly unique and is much more interesting than conventional alternatives. For that reason alone, this is a great option if you want to make a chicken stew but are a little sick of the style.
7. Slow Cooker Chicken and Corn Chowder
For me, Chicken and Corn Chowder is a great comfort food, especially on cold days. So, what’s not to love about a slow cooker version? This recipe lets you have all the advantages of a chowder, without a large amount of work. At the same time, you end up with an incredibly hearty dish, one that is sure to sate any appetite.
6. Curry Chardonnay Crockpot Chicken
This Curry Chardonnay Crockpot Chicken may look conventional on the plate but it makes use of an unusual combination of flavors. In particular, the recipe acts as a melding of a traditional French recipe, along with some Indian flavors. The end result works exceptionally well and it doesn’t even use that many ingredients.
5. Cajun Chicken and Corn Rice Jambalaya
I call this recipe a Cajun Chicken and Corn Rice Jambalaya because it has some similarities to Jambalaya and was inspired by that dish. But, it is also a unique style that strongly relies on the slow cooker to create a smoky all-in-one-pot meal. I love the convenience of it all and it’s always nice to be able to cook everything all together.
As with other dishes, it is possible to change up the herbs and spices somewhat to create a different flavor profile. However, I recommend trying it as written at least once first, because the end result works very well.
4. Slow Cooker Lemon Chicken and Potatoes
Slow cooker recipes often take advantage of complex or unusual flavors but they don’t have to. This recipe for Lemon Chicken and Potatoes is a great example of how slow cooker meals can sometimes be on the simple side, without being boring.
The combination of lemon and herbs with this dish create a flavorful and fresh combination that actually works well with any type of meat. But, I’ve always found that lemon and chicken do pair perfectly and you can also vary up the herbs somewhat based on your own flavor preferences.
3. Chicken Tagine with Spanish Chorizo and Sun-Dried Tomatoes
Tagine is traditionally cooked in a clay pot but that isn’t the case with this Chicken Tagine recipe. Instead, the recipe is an adaptation that takes advantage of a slow cooker. And, why not? The general cooking concept of a slow cooker is much the same as with a clay pot and you can still get the same types of flavors.
The end result really is something else and the dish is worth trying for that reason alone. I honestly can’t explain the flavor effectively, except to say that it is well worth trying. Tagine is also traditionally paired with couscous, which is what I did as well. You don’t have to, of course, but couscous does make a perfect complement to the dish.
2. Thai Green Curry Chicken
This Thai Green Curry Chicken is an authentic dish and is precisely what the name suggests. Specifically, the meal makes use of the traditional Thai flavors and has a nice balance of creamy and spicy tones. The recipe also involves making curry paste from scratch, which isn’t nearly as difficult as it sounds. Doing so gives you much more control over the flavors of the dish and is well worth the extra hassle.
Even though I’m including this dish in the list of chicken recipes, you don’t actually have to make it with chicken. Instead, the flavors pair well with other light meats, including pork and seafood. So, you could change it up if you wanted to.
1. Jerk-Spiced Chicken Fajitas
I love these Jerk-Spiced Chicken Fajitas and the dish is perfect if you’re going to have company over. In fact, this is a good recipe to turn to if you want a bbq dinner, but don’t want all of the work that typically comes with one.
The cool thing about this dish is that it ends up impressing people, even though the work that goes into it is minimal. The reason is simply that the chicken takes on some amazing flavors, without you having to do an overnight marinate first. So, it’s a win-win, especially for people who are busy or who don’t tend to plan in advance.

The Chicken Tagine with Spanish Chorizo and Sun-Dried Tomatoes looks amazing. I have everything already in the kitchen if I substitute the Mexican Chorizo for Spanish Chorizo, which is a little different but should still make for an incredible dish.
One thing I really appreciate about this site is that you have the ingredients listed right on the picture of the dish. That’s so helpful. I don’t mind having to pick up a thing or two to try something new, but it’s great when I find something and can easily tell I have everything I already need!

Ok. So, two minutes into your website and I automatically book marked you. lol. I am no world renowned chef so the slow cooker is always my go to. Always searching for new and tasty meals and options and your site is full of them for sure. I have to get one thing out of the way that bothered me, there was an ad on one of your side columns that was about cracked feet and had a disgusting photo attached to it, lol. It made me lose my appetite than forced me to look around and notice alot of ads that did not fit with the slow cooker theme. It took away from my experience for a minute, then I found your dessert sections and I was fine again. lol. Loved the pictures, loved the colorful way everything was presented and loved the crisp clean content and easy to follow recipes. BUT a great combination prepare it and leave it alone for at least four hours al these different tastes wil interact but not mixed while you’re are coocking them but when you start to eat is an taste explosion !
I advice to leave some olives unsliced !
