Not only is chicken inexpensive, packed with nutrients, and less controversial compared to red meat, it’s also quick to cook and is quite versatile. There are so many chicken recipes out there that you can effortlessly include in your meal plans. And if you’re a fan of grilling, know that with the simplest spices for grilled chicken, whether you’re doing it indoors or outdoors, you can grill chicken as often as you want to!

But before we go into the list of spices for grilled chicken, first things first. Choosing the cut. You can opt for white meat which is the part with less fat and more protein like the breast, or go for dark meat which is the parts with more flavor and doesn’t dry out as quickly as the legs or thigh part. And of course, you should take time to choose quality chicken from your grocer or local butcher shop. You can also try buying fresh chicken online where you can have better access to information about the source of the meat you’re buying.

Or, why not raise your own chickens? Some breeds are best for meat, others for eggs, and yet others for both.

As mentioned previously, chicken is less controversial compared with other meats. However, for those who are still concerned about consuming chicken meat and still want to go for one that is not just healthier in every sense of the word but is also environmentally friendly, then there are chicken alternatives. We now have many plant-based chickens out there that actually taste good and would also surely make even non-vegans happy.

They say nailing a simple dish can get tricky sometimes because it’s so easy and simple that there’s no room for mess-ups. When it comes to grilled chicken, though, it would seem that more often than not, it’s the actually grilling that many find hard to perfect. Because flavoring the meat itself is quite simple. You can start from a simple spice combination for a grilled chicken rub and work your way from there as you experiment with more interesting spices.

To ace grilling chicken, here are a few tips.

First off, prepare your grill. For grilling aficionados, they know that keeping the grill clean is a must especially when you have the really good ones or those smoker-grill combo types. For most of us who occasionally just grill – well, yes please do clean the grill as well. Not only will cleaning prolong your equipment’s longevity but it will also help ensure your food is safe from any kind of food contamination.

Before you start grilling, don’t forget to preheat. Remember to oil your grill grates as well before you start adding your chicken. This will prevent your food from sticking. You’ll fair well with medium heat – you can still get a good sear without burning your chicken. If you’re using a charcoal grill, know which area of the grill is on maximum heat and designate an area with a lower level of fire to have better control once you start grilling.

Secondly, know when to flip. Depending on the cut of meat you are grilling, the time to flip of course varies. Chicken drumsticks, for instance, will take a good 8 minutes before you start flipping, chicken breast on the other hand can be flipped after 6-8 minutes. If you’re a newbie at grilling, it’s best to follow the time indicated in the recipe. Once you get used to it, you’ll be able to tell by touching it or simply by eyeing it, if it’s ready for flipping.

And worry not, because the chicken will pretty much tell you when it’s ready to be flipped. If the grill is properly preheated and oiled, the chicken will naturally release itself from the grill and should be easily flipped. If it’s sticking or feels like it’s stuck, give it a bit more time – say about 30 more seconds to a minute or two.

Thirdly, cover your grill. Covering your grill will not only speed up the cooking time but will also ensure that the meat is cooked thoroughly. It will also prevent your chicken from drying out. You’ll also have fewer flare-ups because you’re basically cutting off oxygen when you put down that lid.

If your grill doesn’t have a lid, you can improvise by using a disposable foil pan and simply turning it upside down to cover your chicken. If you have an aluminum basin, then simply use it for cover. Just be careful in lifting these covers up to check your chicken. Watch out for the steam!

Fourthly, use a thermometer. Don’t be hesitant about using a thermometer if you really want to make sure about your chicken’s doneness.  For grilled chicken to be safe for consumption, it should have a safe temperature of 165 degrees Fahrenheit. And to ensure you’re getting an accurate reading, insert your meat thermometer into the thickest part of the chicken without touching the bone.

If you don’t have a thermometer, worry not. You can simply make a cut into a thick piece so that you can have a peek inside. It’s cooked already if the juice runs clear and the meat is already opaque and is no longer translucent.

And lastly but equally important as well, let it rest. Just like when grilling pork, beef, or what have you, it’s important that you let it rest. You have to give it time to redistribute the moisture back throughout the meat. This will ensure that your chicken is moist and that you’ll be able to enjoy its flavor more – you know, the flavor that you work hard for. You wouldn’t want to let it drain and go to waste just because you cut early and couldn’t wait for a few minutes more.

About five minutes for chicken breasts should do the trick. For bigger cuts, especially when it’s butterfly chicken – it will take about 20 minutes. Keep in mind that internal temperature continues to rise even after cooking. So, make sure you take that into consideration as well since you don’t want to overcook your chicken either.
