The exact history of when soup originated is not clear. However, the majority believe it was first made 20,000 BC in Jiangxi Province, China, where an archeologist found ancient bowls with fire scorch marks. Later in the 7th century, China developed shallow cloud soup, now known as wonton soup.

    • Chicken Noodle
    • Beef and Vegetable
  • Consommé – Clear soup made with ground meat, carrots, onion, and celery, tomatoes, and egg whites. Later the solids are separated, leaving behind a flavorful clear liquid which is skimmed to remove all of the fat.
  • Bisque – Bisques are seafood and cream-based soups, made from the cooking shellfish in their shells. Bisques are smooth soups, examples are:
    • Lobster Bisque
    • Crab and Shrimp Bisque
  • Cream – Cream-based soups start with a roux and cream or milk, along with the desired ingredients. Cream-based soups are often used as a base for other dishes, but can be served on its own:
    • Tomato
    • Cream of Mushroom
    • Cream of Chicken
  • Potage – Potage, a medieval soup originating in Northern France, is the least common soup base. Potage is made by boiling vegetables and meat until it is mushy. Examples of Potage:
    • French Potage
    • Winter Potage
